Old-Fashioned Beef Stew

Ingredients

  • 1/4 cup flour
  • 1/4 teaspoon ground pepper
  • beef cubes (1 inch)
  • 5 teaspoons avocado oil
  • 4 tablespoons red wine vinegar
  • 2 cups red wine
  • 1 cup broth (low sodium) + 1 cup water
  • 2 bay leaves
  • 4 peeled and chopped sweet onions (sauteed)
  • 5 medium carrots cut into quarter inch rounds
  • 6 medium baked potatoes cut into 2/4 inch cubes
  • 2 teaspoons salt

Equipment

  • cutting board
  • chefs knife
  • spatula
  • 1 large pot
  • 1 bowl

Directions

  1. place pot on stove and set to low heat
  2. add oil to pot
  3. add flour and pepper and salt to bowl
  4. add beef to bowl and coat with flour
  5. add beef to pot and cook until browned on each side
  6. take meat out after cooking
  7. add add and sauté onions
  8. add vinegar and wine to pot
  9. cook over medium high heat
  10. scrape beef bits from bottom and side of pot
  11. add beef broth, and bay leaves
  12. add beef back in and mushrooms
  13. bring to boil then reduce to low simmer.
  14. cover pot and cook 1.5 hours
  15. add carrots and simmer for 10 minutes
  16. add potatoes and cook for 10 minutes
  17. salt and pepper to taste

Notes

  • if you boil it a long time the potatoes and meat can dissolve into a nice mush.
  • can add even more carrots and onions
  • 1 tablespoon fresh thyme for more flavor
  • can use balsamic instead of red wine vinegar
  • Add mushrooms (2 cartons) (cook first) and toss in with the meat
  • Can sauté onions after the mushrooms and once caramelized can add potatoes and carrots and cook next to the stew
  • is the beef broth needed? Did it with chicken broth and it was super good.
