Old-Fashioned Beef Stew
Ingredients
- 1/4 cup flour
- 1/4 teaspoon ground pepper
- beef cubes (1 inch)
- 5 teaspoons avocado oil
- 4 tablespoons red wine vinegar
- 2 cups red wine
- 1 cup broth (low sodium) + 1 cup water
- 2 bay leaves
- 4 peeled and chopped sweet onions (sauteed)
- 5 medium carrots cut into quarter inch rounds
- 6 medium baked potatoes cut into 2/4 inch cubes
- 2 teaspoons salt
Equipment
- cutting board
- chefs knife
- spatula
- 1 large pot
- 1 bowl
Directions
- place pot on stove and set to low heat
- add oil to pot
- add flour and pepper and salt to bowl
- add beef to bowl and coat with flour
- add beef to pot and cook until browned on each side
- take meat out after cooking
- add add and sauté onions
- add vinegar and wine to pot
- cook over medium high heat
- scrape beef bits from bottom and side of pot
- add beef broth, and bay leaves
- add beef back in and mushrooms
- bring to boil then reduce to low simmer.
- cover pot and cook 1.5 hours
- add carrots and simmer for 10 minutes
- add potatoes and cook for 10 minutes
- salt and pepper to taste
Notes
- if you boil it a long time the potatoes and meat can dissolve into a nice mush.
- can add even more carrots and onions
- 1 tablespoon fresh thyme for more flavor
- can use balsamic instead of red wine vinegar
- Add mushrooms (2 cartons) (cook first) and toss in with the meat
- Can sauté onions after the mushrooms and once caramelized can add potatoes and carrots and cook next to the stew
- is the beef broth needed? Did it with chicken broth and it was super good.
