Salad - Kale Salmon Pasta with Dijon Avocado sauce

Ingredients

  • 1/2 cup Avocado (1 huge or 2 medium avocadoes)
  • 1 tablespoon Grey Poupon Dijon Mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1 teaspoon lemon juice (to taste)
  • 1 bunch of Fresh kale (stems removed and)
  • 1 6 oz can salmon
  • 1/2 red pepper cut into tiny pieces
  • 1 package of whole wheat pasta (rotini) cooked el-dente (can be cooked the day before and left in the refrigerator)

Equipment

  • 1 large bowl
  • 1 mixing spoon
  • 1 set of measuring spoons
  • 1 knife
  • 1 cutting board
  • 1 can opener

Directions

  1. cook pasta
  2. wash kale, remove stems, tear into pieces and massage
  3. chop pepper and set aside
  4. scrape avocado into bowl
  5. add mustard
  6. add salt
  7. add fresh ground pepper
  8. add lemon juice
  9. mix well
  10. add kale
  11. mix kale cover with dressing
  12. add salmon, break into medium chunks, and mix in
  13. add red pepper, mix well
  14. add pasta, mix but make sure not to crush pasta
  15. serve
