Salad - Kale Salmon Pasta with Dijon Avocado sauce
Ingredients
- 1/2 cup Avocado (1 huge or 2 medium avocadoes)
- 1 tablespoon Grey Poupon Dijon Mustard
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 1 teaspoon lemon juice (to taste)
- 1 bunch of Fresh kale (stems removed and)
- 1 6 oz can salmon
- 1/2 red pepper cut into tiny pieces
- 1 package of whole wheat pasta (rotini) cooked el-dente (can be cooked the day before and left in the refrigerator)
Equipment
- 1 large bowl
- 1 mixing spoon
- 1 set of measuring spoons
- 1 knife
- 1 cutting board
- 1 can opener
Directions
- cook pasta
- wash kale, remove stems, tear into pieces and massage
- chop pepper and set aside
- scrape avocado into bowl
- add mustard
- add salt
- add fresh ground pepper
- add lemon juice
- mix well
- add kale
- mix kale cover with dressing
- add salmon, break into medium chunks, and mix in
- add red pepper, mix well
- add pasta, mix but make sure not to crush pasta
- serve
