New Basic Blueberry Pancakes

Ingredients

  • 1 cup flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup half-and-half
  • 6 tablespoons milk
  • 3 tablespoons packed light brown sugar
  • 2 tablespoons unsalted butter melted at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon grated lemon zest

Equipment

  • measuring cup
  • measuring spoons
  • Medium bowl
  • Whisk
  • 10 inch skillet

Directions

  1. In bowl mix:
    • flour
    • baking powder
    • cinnamon
    • nutmeg
    • salt
  2. In another bowl mix until smooth:
    • half and half
    • milk
    • brown sugar
    • butter
    • egg
    • vanilla
    • lemon zest
  3. mix liquid into dry ingredients until smooth
  4. let batter sit for 20 minutes
  5. For each pancake:
    • heat skillet over medium high heat, then lightly butter
    • drop batter in tablespoon quantities, cook until golden on bottom and bubbles pop on surface ~1 minute, turn and cook 1 minute on the other side

Notes

  • Makes ~18 3 inch pancakes

  • Can add small blueberries

  • maple syrup is a great topping but can also use sweet orange butter.
