New Basic Blueberry Pancakes
Ingredients
- 1 cup flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 3/4 cup half-and-half
- 6 tablespoons milk
- 3 tablespoons packed light brown sugar
- 2 tablespoons unsalted butter melted at room temperature
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon grated lemon zest
Equipment
- measuring cup
- measuring spoons
- Medium bowl
- Whisk
- 10 inch skillet
Directions
- In bowl mix:
- flour
- baking powder
- cinnamon
- nutmeg
- salt
- In another bowl mix until smooth:
- half and half
- milk
- brown sugar
- butter
- egg
- vanilla
- lemon zest
- mix liquid into dry ingredients until smooth
- let batter sit for 20 minutes
- For each pancake:
- heat skillet over medium high heat, then lightly butter
- drop batter in tablespoon quantities, cook until golden on bottom and bubbles pop on surface ~1 minute, turn and cook 1 minute on the other side

Makes ~18 3 inch pancakes

Can add small blueberries

maple syrup is a great topping but can also use sweet orange butter.
