Orange Oatmeal Muffin

Ingredients
- 1 cup rolled oats
- 1 cup warm orange juice (or 1/2 orange juice plus 1/2 cup boiling water)
- 6 tablespoons butter
- 1/4 cup packed brown sugar
- 1/4 cup white sugar
- 2 eggs
- 1 cup four
- 2 teaspoons baking powder
- 3/4 teaspoons salt
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla

Directions
- Preheat Oven to 350F
- Spray muffin pan for 12 big muffins or 18 medium muffins (alternatively use paper liners)
- soak oats in orange juice for 15 minutes
- cream butter and sugar
- beat in eggs one at a time
- combine with oat mixture
- mix in flour, baking powder, salt, nutmeg
- mix in vanilla
- spoon batter into prepared pan tp 2/3 full
- Bake until golden brown (~ 20 minutes)
- cool on cooling rack
Notes
- other fruit mixtures may be used for different flavors
- ensure fruits are pureed
- frozen fruit (blueberries, raspberries) may be microwaved
