Orange Oatmeal Muffin

Ingredients

  • 1 cup rolled oats
  • 1 cup warm orange juice (or 1/2 orange juice plus 1/2 cup boiling water)
  • 6 tablespoons butter
  • 1/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 1 cup four
  • 2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla

Directions

  1. Preheat Oven to 350F
  2. Spray muffin pan for 12 big muffins or 18 medium muffins (alternatively use paper liners)
  3. soak oats in orange juice for 15 minutes
  4. cream butter and sugar
  5. beat in eggs one at a time
  6. combine with oat mixture
  7. mix in flour, baking powder, salt, nutmeg
  8. mix in vanilla
  9. spoon batter into prepared pan tp 2/3 full
  10. Bake until golden brown (~ 20 minutes)
  11. cool on cooling rack

Notes

  • other fruit mixtures may be used for different flavors
    • ensure fruits are pureed
    • frozen fruit (blueberries, raspberries) may be microwaved
