Ingredients

2/3 cup pecans

2 teaspoons ground cinnamon

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

1 teaspoon baking powder

2 cups old-fashioned oats

3 tablespoons melted unsalted butter

1/3 cup maple syrup or honey
-
2 teaspoons vanilla extract

1 3/4 cups milk

2 large eggs
-
2 1/2 cups blueberries (can be frozen)
Equipment
- Oven
- 9 inch square baking pan
- Big Mixing bowl
- Small mixing bowl
- Measuring cups
- Measuring spoons
- Spatula
- Whisk
Directions
- Preheat oven to 350
- Toast nuts 4 minutes
- In big mixing bowl, combine: toasted nuts, cinnamon, salt, nutmeg, oats.
- In small mixing bowl, whisk: melted butter, maple syrup / honey, vanilla, milk, egg
- Place 2 cups of blueberries on bottom of pan.
- Cover blueberries with dry ingredients
- Cover dry ingredients with wet ingredients
- Wiggle pan to make sure liquid moves down through oats
- Scatter 1/2 cup of blueberries over the top
- Convection Bake for 45 minutes (or brown on top)
- Cut into pieces and serve
Notes
- Save for later: cut into pieces and freeze. To reheat: microwave for 30 seconds, then heat in oven at 350 for 10 minutes.
