Blueberry Baked Oatmeal

Ingredients

  • 2/3 cup pecans

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground nutmeg

  • 1 teaspoon baking powder

  • 2 cups old-fashioned oats

  • 3 tablespoons melted unsalted butter

  • 1/3 cup maple syrup or honey

  • 2 teaspoons vanilla extract

  • 1 3/4 cups milk

  • 2 large eggs

  • 2 1/2 cups blueberries (can be frozen)

Equipment

  • Oven
  • 9 inch square baking pan
  • Big Mixing bowl
  • Small mixing bowl
  • Measuring cups
  • Measuring spoons
  • Spatula
  • Whisk

Directions

  • Preheat oven to 350
  • Toast nuts 4 minutes
  • In big mixing bowl, combine: toasted nuts, cinnamon, salt, nutmeg, oats.
  • In small mixing bowl, whisk: melted butter, maple syrup / honey, vanilla, milk, egg
  • Place 2 cups of blueberries on bottom of pan.
  • Cover blueberries with dry ingredients
  • Cover dry ingredients with wet ingredients
  • Wiggle pan to make sure liquid moves down through oats
  • Scatter 1/2 cup of blueberries over the top
  • Convection Bake for 45 minutes (or brown on top)
  • Cut into pieces and serve

Notes

  • Save for later: cut into pieces and freeze. To reheat: microwave for 30 seconds, then heat in oven at 350 for 10 minutes.
