Aloo Palak

Ingredients

  • 2 cloves of pealed garlic
  • 1/2 inch piece of fresh pealed ginger root
  • 2 tablespoons of olive oil
  • 1 onions, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 2 roma (plum) tomatoes, diced (~4 cups when chopped)
  • 2 potatoes, diced (~4 cups when chopped)
  • 2 bunched of fresh spinach, chopped fine (~2 cups once chopped)

  • chefs knife
  • cutting board

Directions

  1. grind garlic and ginger together to make a paste
  2. place pot on stove
  3. add olive oil to pot
  4. set burner under pot to medium high heat
  5. sauté onions until translucent
  6. add spices: cumin, coriander, cayenne, tumeric, salt
  7. mix well
  8. add tomatoes
  9. add potatoes
  10. cook for 20 minutes, stir every five minutes
  11. add spinach
  12. cook until potatoes are tender ~10 more minutes
